Helena, of Greek and German origin but born and brought up in London, England has been living in the Bologna Hills for the last 20 years. After giving up her prestigious job as International Event Manager for Lamborghini she decided to fulfil her dream of working in food and making pasta by hand. She set up Yummy Italy in 2014 and has been featured in various prestigious newspapers and magazines as well as winning the Global Industry Travel Awards 2019 for the Best Artisan Food & Wine Experiences in Italy. However, as she says, her "heart is made of pasta" and after dealing with Sfogline who were good at making pasta but couldn’t teach, she decided to bite the bullet and learn how to teach from Rina Poletti, Italy’s leading pasta making teacher. She has developed a foolproof method that focuses on specific movements in order to ‘pull the dough’ into a rounded sfoglia as well as focusing on troubleshooting and dealing with potential problems - fundamental when one is making pasta back at home. She has taught both pasta-obsessed amateurs as well as well-known professional chefs and pasta-makers and also teaches culinary institute students and graduates, including Le Cordon Bleu.
